    @joan3338last year Here in Greece we dip bread when we finish our salads. It has tomato juice, cheese crumbles, lemon or white vinegar and olive oil. We eat so much bread it's considered a second meal. 1964

    @gumarks_last year I'm Spanish and I usually use different oils like this:
    -Extra virgin olive oil for things that don't need cooking, like a salad. I don't want to lose that excellent taste by heating the oil.
    -Regular olive oil (which usually includes both refined and virgin oils) for usual cooking (steak, chicken breast, eggs, sauteed vegetables and pretty much anything that doesn't require a lot of oil, just a light amount).
    -If I need a bigger amount of oil, such as for deep frying, I prefer to use sunflower oil, which also is a very common oil in Spain.

Of course, butter is also used, some other vegetable oils (mainly sesame oil) too, but olive oil is the rule… Since quality control and food quality awareness have increased (at least in the EU countries, that I’m aware of) , for more and more people olive oil means extra virgin olive oil… ... 2

    @pietrotettamanti7239last year The problem is not the oxidation of the oil, it's pyrolysis (which happens at smoke point). And olive oil does have a lower smoke point than other oils as it has more unsaturated fats (oleic acid, linoleic, alpha linolenic etc.) than other oils (which contain more saturated fats like stearic/palmitic/myristic acid etc.). Saturated fats are less dangerous when heated because they are more stable and don't pyrolize forming PAHs and other dangerous products. And antioxidants do nothing to counteract formation AND action of carcinogenic molecules like benzopyrene. They can only mitigate the effect of oxidizers and scavenge radicals. But that has nothing to do with PAHs.
    That said, you can absolutely cook safely with olive oil as long as you keep it below its smoke point. Just don't use it to deep fry stuff. Sunflower seed oil or palm oil are much better suited for that.

    I'm Italian and I would use an oil Taggiasco, from Tuscany or from south of Italy depending on the dish.
    And I'm referring only to olive oil.
    Other oils just have a bad taste with our recepies (that ofc is debatable depending on where you're from).

    @bleachnbones7107last year As an Italian, if you've never had bread with olive oil but have the means to get your hands on some good quality oil, trust me, try it. You just take a slice of bread (not packaged loafs, not toast, get the good bread, the one with a crunchy crust), drizzle it with good olive oil and sprinkle a bit of salt on top. I swear to God, one of the most delicious "snacks" you'll ever have. I used to have it all the time as a kid.
    Another similar snack, you take your slice of bread (better if it's a little stale, if it's too soft you lightly toast it), cut a tomato in half, rub and squeeze the cut side on the bread so it soaks up all the juices and pulp, add a pinch of salt, a bit of olive oil and some fresh basil. If you like it, before the tomato you can rub some garlic on the bread too. It's basically a lazier, less fancy bruschetta. It's also literally heaven

    @iancanada6875last year Vegetable oils are much more oxidizable at cooking temperatures and they’re already extremely oxidized from the extraction process when extra virgin olive oil is cold pressed which doesn’t oxidize any of the oils.

I harvest the olives myself and go to the presses to squeeze my olive oil cold pressed , no leaves, extremely clean unlike busineses. I get a pure sublime olive oil that smell olive just by opening the cap of the bottle.
    I pour about 3 table spoon in a plate, I ad a little bit of salt and this demultiply the strength of the olive oil, it’s just succulent.
    Also I can ad salt and also crush a long chili 🌶️ in the oil, believe me, when I eat that, I feel like I just had a full meal like mashed patates and steak.
    I understand that if you didn’t grow up eating olive oil with your eggs you might to enjoy the flavor as much , as enjoying strong olive oil is somehow an acquired taste.
    But train your palate, and eat it every day with bread , salad etc. When your palate will get older, when you will taste a good olive oil, will feel like tasting life. Tasting something your body was craving, especially if you didn’t have it for like 2 weeks and went on a bad diet on vacation, then when you will take the first bit of olive oil bread, you gonna feel like going all the way to your brain, just like some kind of drugs .

    @balk100last year There are at least 5 types of olive oil. the virgin and extra virgin are just two of them.
    But all kinds of olive oil are suited for cooking and it is actually recommended by doctors and nutrionnists to cook with them instead of the other types of oil. The nutrients and vitamins you can find in olive oil are endless (it prevents cardiovascular diseases and aneurysm rupture, it's also a good source of omega 3,6 and 9, and it keeps your hair and skin in a good health).
    Just Keep in mind that any type of oil becomes toxic at a certain temperature, you should just learn what temperature you shouldn't reach when cooking with it.
    However, Virgin and extra Virgin olive have a round and more complex flavor that are better suited to eat on its own or in any type of salad, that's why it's expensive. The bitter the extra Virgin olive oil, the better it is.
    In north Africa, it's common to eat bread dipped in extra Virgin olive oil and honey for breakfast and trust me there's no better way to start the day. An instant boost of energy for all day long. You should really try it!

    @headfott1674last year Antioxydants like vitamin (mostly named tocopherols in Oils) are extra fragile to heat, such that even 60°C is enough to alter them.
    Hence the reason why you don't cook with olive oil, because it's just wasting nutrition.
    However, heat does affect unsaturated acids. The more unsaturated your oil composition is, the less you want to cook it.

    @Killmewithfirelast year I didn't know olive oil had a bad reputation other than for its price. Just don't smoke it, aka, learn how to cook people. Here in Spain olive oil is used in everything except for deepfrying, and it really is the best possible oil for so many different dishes....

    Almost everything is cooked using Olive oil.
    Some people even fry churros using olive oil.

    Really good evo might not change flavor as quickly but at that point ; there are much cheaper oils to use for cooking.
    EVO doesn't have a bad reputation at all. Its used more than any other oil for low temp and not heat food prep.

    also if you want to cook with olive oil you can just get regular olive oil and not extra virgin as it burns at a higher temp ...
