Prawn Biryani Restaurant style: This dum style hyderbadi prawn biryani is great in taste. This is one of the favourite biryanis most of the people like to have. Ingredients: Yogurt: 1/2 cup Salt to tast: Fried onion: 3 medium sized onions Saffron soaked in milk Ginger paste: 1 table spoon Garlic paste: 1 table spoon Green chillies: 4 to 5 biryani masala: 1 and half table spoons Oil: 3 to 4 table spoons Butter: 1 to 2 table spoons Cumin powder: 1 table spoon Coriander powder: 1 table spoon Garam masala: 1 table spoon Red chilli powder: 1 table spoon Basmati rice: prawns: 400 grms to 500 grms Chopped mint & Coriander: half bunch each Direction: Marinate shrimp or prawn with half table spoon cumin powder, coriander powder, chilli powder, garam masala, little amount of salt. Fry these shrimps in oil, shallow fry them. then add remaining chilli powder, garam masala, coriander powder cumin powder, 2 table spoons of biryani masala powder, ginger, garlic paste, green chillies, then add yogurt. Add fried onions and half of the mint and coriander. once all these ingredients are added mix it. Then add 2 table spoons of butter. check the salt and add the salt according to the taste. Now boil water add basmati rice, once basmati rice is 85% cooked, then add on top of the shimps add chopped mint and coriander and fried onions, then add 90% cooked rice on top of the 85% cooked rice as a second layer. then add the remaining chopped mint and coriander and fried onions just add butter 1 table spoon on top of the rice then garnish with saffron soaked milk. pack the vessel with aluminuim foil and cover with lid. cook biryani on high flame for 15 to 20 mins depends on your flame then cook another 30 mins on low flame. While Cooking Biryani, Make Sure, You Are Using Thick Bottom & Wide Open vessel. 3. To Get Nice Color and flavor for Biryani, Add a pinch of egg or lemon yellow color into Saffron water. 4. After switching of the flame don't immediately open the lid, leave it 5 to 10 mins. 5. Add few spoons of clarified butter or Desi Ghee on top of the rice.
