This omelette recipe without egg will save your day anytime if you love omelette. The taste, texture and color matches precisely with an egg omelette and no one will find out the difference that this has no egg. Paneer is the main ingredient in this omelette which gives the omelette it’s classic fluffy texture. The flavor of the egg is rightly captured by soya sauce and milk. Rice flour and corn flour helps the omellete hold its structure. This omelette is full of protein and its ideal for a wholesome breakfast. So, an omelette is no more a dish to be saved for the nonveg days and you can prank your blindfolded vegetarian friend that you have made her eat eggs. Recipe Card – Eggless omelette – serves two **Ingredients** Paneer -100 gms Rice flour – 1 tbsp Corn flour- ½ tbsp Turmeric powder - 1/4 tsp Crushed black pepper – ½ tsp Soya sauce – ½ tbsp Milk – ¼ cup Salt Butter – 1 tsp Onion chopped – 2 tbsp Green chili chopped – ½ tsp **Pre preparation** Cube the paneer. Chop the onions and green chilis. Measure and set the ingredients ready. **Procedure** 1. In a blender, add the paneer cubes, rice flour, cornflour, turmeric powder, crushed black pepper, soya sauce, salt, milk and blend together into a smooth-flowing mixture. 2. If the batter is too thick, add more milk and if it’s thinner than your preferred consistency, add more flour. Adjust the spices and salt according to your additions. 3. Transfer the smooth batter to a bowl 4. Add chopped onions, green chilis and mix well. 5. Heat the pan in medium heat and add oil. 6. Pour a ladle full of batter in hot pan and reduce the heat to low. 7. Cover with a lid and let it cook for two to three minutes. You can check the doneness of the omlette by flipping just the corners and checking the other side. 8. If it’s done one side, flip it and let cook for another two minutes in low flame without covering. 9. With a spatula, gently lift and transfer the hot omlette to a plate. 10. The softest omlette is ready to be served. **Serving options** 1. Serve as a wholesome breakfast with some milk. 2. Add pre-cooked vegetables, to spike up the nutritional value of this omelette. 3. Stir fry vegetables or mushroom or chicken and serve with this omelette as a filling for a healthy twist. 4. Skip all the fillings, vegetables and even onions and delish it as it is. 5. Makes perfect side for rice with sambar, rasam. **Substitutions** 1. For a vegan version of this vegetarian omelette, use Tofu instead of paneer and any non-dairy milk like almond milk, soya milk can be used in place of milk. 2. You can add vegetables of your choice. 3. Deseed the green chilis to reduce the spiciness. ' **Very important notes** 1. The recipe can be doubled to increase the number of servings. 2. Cooking the omelette in low flame is extremely important. The paneer batter tends to burn quickly if the heat is high. 3. Covering the pan while cooking the first half is very important as this step helps both the sides cook. 4. Be mindful about the addition of salt as soya sauce is also salty. 5. Adjust the amount of milk and rice powder according to your preferred consistency. 6.
